Wojciech Okoński brings over 15 years of international culinary experience to Belvedere Restaurant, combining the precision of French technique with a deep connection to Polish culinary heritage. His vision is to give traditional Polish cuisine a contemporary, elegant expression.
He honed his craft primarily in London, working in an international culinary environment shaped by British and French cuisine. Throughout his career, he has had the opportunity to work on projects associated with renowned chefs such as Gordon Ramsay, Marco Pierre White, Jason Atherton and Pascal Ausignac.
His cooking is rooted in precision, respect for the ingredient and seasonality. He combines French technique and elegance with Polish produce, culinary heritage and foraging, drawing particular inspiration from royal cuisine and the figure of Jan Baptysta Tremo.
At Belvedere Restaurant, he oversees the culinary direction and development of the menu, creating a distinctive and contemporary interpretation of Polish tradition.
